*When Joel Salatin was a boy, the garden by his family's Virginia house was clay clods. You had to hit them with a sledgehammer to tell a rock from dirt.*

His grandfather's place in Indiana was different. Grandpa was a charter subscriber to Rodale's Organic Gardening and Farming magazine and sold produce from his garden. Joel calls it an abundance place.

That contrast got hold of him and never let go. He got his first chickens at 10 and sold eggs at a farmers market as a teenager. In 1982 he quit his job at the local newspaper to farm full time.

The family's method was to copy nature: herds that move, followed by birds. Cows graze tall grass and trample some into the soil. Then the chickens come through, spread the manure and eat the bugs. He calls it a ballet in the pasture.

By his account, the first soil test, in 1961, averaged less than 1% organic matter. Today the farm averages over 8%.

He wanted to know if that showed up in the food, too. People told him an egg is an egg. He says Polyface tested its eggs and found big differences in nutrients.

He also thinks our idea of safe food has gone wrong. Today, he says, sterile gets treated as safe.

His answer is connection: know your farmer, check what the label means, and see the land.

Below, he explains how to tell real pasture from marketing, why diversity matters, and what he eats himself. His views, not medical advice.

**TL;DR:** Joel Salatin's family farm started on worn-out land with soil like clay clods. He says that moving animals through the pasture, cattle first and then chickens and pigs, took organic matter from under 1% to over 8%. He prefers the term grass finished to grass fed, and he says the best way to check a farm is to visit it. If you can't, study its website: the pictures and the language. For his own diet, he says pay attention to how you feel. His views, not medical advice.

**Who is Joel Salatin?** A regenerative farmer at Polyface Farm in Virginia's Shenandoah Valley, an author, and a long-time advocate for local, pasture-based food.

## Key takeaways

- His grandfather subscribed to Rodale's organic magazine starting in 1948 (04:09).
- He describes Polyface's soil going from under 1% to over 8% organic matter (22:21).
- Moving animals in sequence is what he calls a ballet in the pasture (23:12).
- He prefers grass finished over grass fed (52:10).
- Best check: visit the farm. Next best: study its website (55:48).

## Building soil with animals

Joel says grasslands grow in an S curve and need grazers to restart them, as bison once did. At Polyface, cattle move first and chickens follow to spread manure and eat insects. He credits that sequence, along with mixing forest and open land, for building the soil.

## Grass fed vs grass finished

He says the industry can call a cow grass fed if she has eaten any grass at all, so he uses grass finished for beef. He also says pasture claims for poultry and pigs can be stretched, so ask what the pasture really looks like.

## How to vet a farm

His best advice is to go see it. If you can't, look closely at the website. Are there real photos of animals outside? Who are the farmers? Does the language match what you see?

## How he eats

Joel says he doesn't have it all figured out. He focuses on how he feels when he wakes up, calls himself a meat and fruit guy, and says variety matters.
